@Peaceandprosperity @TriHusker @chris I see by their website they have many choices of wheat varieties. Since I'm interested in sourdough, I'm thinking the Rouge de Bordeaux Flour would be ideal for me according to their handy cheat sheet. BONUS: It's grown in Texas, my home state.
